Boston Tree Party! (Growing Fast)

Fruit trees everywhere! Wouldnt that be nice. Well, a bunch of people and organizations are working to make that happen. Theyve formed the Boston Tree Party, a little more productive than the modern-day Tea Party nightmare we have in Congress and in state and local governments.

I love this intro to the party and its purpose from Lisa Gross of Civil Eats (both in text and video she recently spoke at a TEDx conference about this):

Food of the Week: Swiss Chard

Swiss chard

Swiss chard is not only one of the most popular vegetables along the Mediterranean but it is one of the most nutritious vegetables around and ranks second only to spinach following our analysis of the total nutrient-richness of the World’s Healthiest vegetables. It is also one of only three vegetables that we recommend boiling to help reduce its concentration of oxalic acid. Slice leaves 1-inch wide and the stems 1/2-inch wide and boil for just 3 minutes. How do foods affect my sleep?

There’s no doubt that there are many of us that have trouble getting a good night’s sleep. The statistics here are striking. For example, 42% of all healthy, middle-aged women in the United States report some kind of sleep trouble, including difficulty falling asleep, waking up during the night, or not feeling refreshed in the morning.

There’s no doubt that from a physiological standpoint that sleep is a complicated event and one that’s related to many factors that cut across the “mind-body” spectrum. When we can’t get to sleep because we’re worried and feeling anxious, or depressed and feeling down, or confused and can’t figure something out, we obviously aren’t going to get to the root of our sleep trouble until we’re able to work through the parts of our lives that we’re feeling anxious or depressed about.

Iodine: Experts tell women to have more in the diet

Is it time to start adding iodine to table salt? It may be the most likely solution to an iodine deficiency in women. A study, partly carried out by researchers in University College Dublin, looked at 700 teenage girls in Belfast and other parts of the UK.

It was found that more than two-thirds of them were low in iodine.

Experts believe the deficiency stems from children drinking less milk, which is a common source of iodine.

Eating Vegan in Gainesville, Florida

Gator Town, that is. Good ol’ Gainesville, Florida had a smorgasboard of healthy and vegan goodness and I am excited to tell you all about it.

While Gainesville is essentially a college town, they’ve got some nice stuff. If you’re on a tour of Florida, be sure to stop by this inland town and visit its many lakes, springs, botanical gardens or take a guided tour of downtown or event the University. But regardless of why you are in Gainesville, make it a point to come hungry!
